At the head of the gourmet pastry shop Le Vanillier in Nice, since 1993, François has previously worked in several starred establishments: from the famous Martinez Hotel in Cannes to Marc Veyrat in Annecy and Jacques Chibois in Grasse.


Lover of good and beautiful products, he is the creator of the Macaron de Nice.

Once upon a time… The “Macaroon”… 

Appeared in France in the sixteenth century, this little biscuit was initially on its own before being united, two by two, in its modern version. This old-fashioned macaroon became the famous speciality of many cities. Nice found his : a crispy little shell that hides a heart of Provence’ almonds with a delicate perfume of the French Riviera colours

  • Mediterranean green anise

Unique artisan product, gluten and dairy free, without any preservatives. 

It is daily produced in our pastry shop in Nice, it will be preserved in an optimal way for a month in its original box.
